Today is Saturday, and we decided early this morning that today was the perfect day for a nice breakfast.
(In our house that means something other than our weekday staples: a bagel, frozen waffle, or peanut butter toast.)
We initially decided on bacon, eggs, and toast…and after foraging through the contents of the refrigerator, came up with the idea to make an omelet using the Boar’s Head smoked gruyere I bought two days ago.
We splurged on “real” (vs. the lower-fat/calorie turkey that we normally eat) bacon, and then came up with the idea of adding it right in to the omelet.
We cooked the bacon first so that we’d be able to cook the omelet right in the little crispy carmelized bits of bacon left over in the pan (ok, and the bacon grease) to give it even more flavor.
I whisked up 5 organic eggs along with a splash of low-fat milk. (It’s a southern thing.)
We poured the mixture into the skillet and let the eggs cook, covered, on medium heat. Once they were almost cooked through we added several thick slices of smoked gruyere, crumbled 3 slices of bacon in to bits and sprinkled it on top, and then allowed the eggs to finish cooking and the cheese to melt before flipping one side over. This was more than enough food for the two of us, along with a slice of buttered (gluten-free by Nature’s Own) toast each.
And let’s just say…OMG.
