My take on my grandmother’s vegetable soup

This recipe actually originated with my great, great grandmother, Riley…well over 100 years ago. She used to make it for my grandmother, Dorothy, when she was a young girl.

While it is always absolutely delicious when my grandmother makes it according to the original recipe, I wanted to update it a bit and boost certain flavors.

Start with a large covered pot. Stock pot size, preferably.

  • 2 lb organic, grass fed ground beef – brown it on medium along with 3 tbsp minced garlic and 2 tbsp dried, minced onion.
  • add generous amounts of cracked black pepper and garlic salt, to taste
  • add 1.5 boxes or 3-4 cans beef broth
  • 1 large can crushed tomatoes
  • 1 can organic diced tomatoes (undrained)
  • 1 can green beans (undrained)
  • 2 bags frozen mixed vegetables
  • 1-2 stalks organic celery, chopped
  • 1 onion, chopped

Optional; add any or all of the following, to taste:

  • oregano
  • thyme
  • celery seed
  • cumin
  • coriander
  • onion powder
  • garlic powder
  • red pepper flakes or cayenne pepper (go easy)
  • 1 baking potato, cut in to bite sized pieces
  • 2-3 bags Success rice (uncooked)
  • add more beef broth or water if necessary

Heat to a boil then reduce to simmer, covered, for about two hours.

This recipe makes a lot of soup, so unless you have a really large family, plan on plenty mass quantities of leftovers…possibly even enough to freeze and/or share with a neighbor.

It’s also very adaptable so if you’d like to make a vegetarian version, replace the beef broth with vegetable broth and/or water, omit the ground beef, and up the veggies. You could also add potatoes, rice, and/or pasta in order to make it heartier.

Don’t be afraid to play around with it! I do, every time, and so far I’ve never gone wrong.

Oh, and one more tip. The more you warm this over, the better it is.

House hunting

We are in process of looking for our “forever home” and today we viewed a finished model of the one we really like. It’s in Brookhaven which is where we want to be as it’s where we spend the majority of our time, and it’s also much closer to Todd’s Dreamland Interactive studio (we are currently in Decatur.)

There are a few differences – mainly in that upstairs, all flooring will be wood except the laundry room (tile) and the bedrooms (carpet.) So when you see the upstairs landing and loft space, that would all be wood rather than carpet as seen in the video.

The other biggest difference I could see is that the kitchen island would not have that raised bar/counter…the island would all be counter level with an overhang suitable for chairs/stools.

Sunday mornings

This is…another perfect Sunday morning.

Coffee, breakfast, futzin’ online, watching our favorite political talk shows…getting ready for a run, then going out for a post-run lunch.

When we get home we’ll be decorating for Christmas.

It’s a magical time of year.

10 things to do without distraction

1. reading. i hate reading with the television on. or the smart phone nearby. or reading while keeping an eye on the laptop. focus on the book. read slowly. carefully.

2. running. i like running without music. i like to listen to nature, the sounds of my feet and breathing. i do my best thinking here.

3. conversation. when you are having a conversation with someone, why oh why are you thinking about or doing ANYTHING else?

4. writing. this should be a creative, emotional and personal activity. why take away from writing by thinking about and doing other things.

5. shaving. i know this is odd, but i love the process of shaving. going slowly, carefully, methodically, enjoying the scents of the lotion. this process grounds me. [sidenote: i think it is wise to invest in the best quality blades, creams, lotions - it is worth it]

6. thinking. frankly, if you are multi-tasking here, you aren’t thinking. you are just conscious.

7. loving. the thing you are loving should be front and center. in complete focus. however you define loving here.

8. eating. with the exception of eating with friends and enjoying conversation while eating, eating should be done without distraction. relish the preparation, savor the tastes, savor the scents, savor the wine that goes with the meal.

9. work. when you are working on a project for a customer, focus on the project. nothing else. don’t be distracted by idle conversation, email, texts, news, meetings, etc.

10. down time. no rules here, but do whatever you need to do to clear your mind from the hustle of life. don’t let ANYTHING get in the way of that. i mean ANYTHING…
